Yummy dinner from tonight!!!

Hey, we had a great dinner tonight and just thought i would share my recipe that i came up with out of nowhere. I am sure someone has made this meal a hundred times but i used what i had at the house.

k, so i had some chicken breast that i cut in half thickness wise so they are pretty thin. next i dried them, dipped them in flour (which i seasoned with garlic powder, onion powder, salt, pepper), 3 beaten eggs, and then in italian bread crumbs mixed with parmisan cheese. These three things are on different plates or bowls. next i heated a pan up with several tbls. of marg and a few of oil. This way the butter won't burn and it gives good flavor. cook them on medium heat until light brown on both sides. Move them to the oven at 275 degrees and place them on a rack over a shallow pan. This will keep them crispy on all sides cause the air can circulate around them. This will finish them off so remember not to over cook them in the pan. I left them in the oven the whole time i made everything else which was 15 to 20 min.

Yummy gravy, lighter in calories than normal, I was so proud. K, so you melt 3 tbls marg in the pan and saute 3 finely chopped green onions until tender. add several tbls. of flour and let cook for a minute to get rid of the raw flour taste. Open a can, or whatever you have, of chicken broth. This will thicken because of the flour. As it thickens give a couple of tbls of cream, half and half or milk. This will give it the creamy feel of regular gravy but it is so great, and flavorful!!! Okay so the gravy is done.

I served this over mashed potatoes and with steamed broccoli and cauliflower!! Racheal Ray would have been so proud. Try this out and let me know how you like it!

Great First Day of 2010!

BEWARE: Picture Overload!!

So our family and several other friends and their families, decided to go sledding this afternoon. It was a perfect winter day and it was actually pretty warm and we had a blast. The kids played and played, the adults laughed and sledded, we had two snowmobiles (thanks guys!!) and our fourwheeler to haul people around, and a good time was had by all with no accidents. I did hit the rock at the bottom of the big hill but it was because Gabe jumped out and scared me and I thought I was going to hit him. Haha, don't hit Gabe, hit the rock, cause that is the smarter thing to do. Anyway, all is well and we had and excellent day. I really LOVE THESE PEOPLE and couldn't ask for better friends. Thanks for a great, fun-filled day!
